Extra virgin olive oil Bosco Monte is an olive oil of top quality, obtained merely by mechanical procedures with cold pressing of olives of sorts Frantoio, Leccino, Pendolino, Buža Puntoža and Maurino. The oil is of a delicate, fruity and harmoniously gentle flavor, just a little spicy. With our selection of tree sorts we reached a variety and matchless quality incomparable with the majority of other olive oils of the region. We admit that luck must have been on our side or the trees are simply giving us back all the good things we do for them in the form of delicious and flavorful oil.

ABOUT US

Our olive plantation lies in Istria, in the region of the town Novigrad, Croatia. The macro location of the land of 21 hectares (210000 square meters) is bounded in the north by Slovenian Istria, in the west by the sea, in the east by the Karst Edge (Kraški rob) and in the south by the river Mirna valley. This is the area where our olive oil, Extra Virgin Olive Oil Bosco Monte, is produced. The eloquent proofs that this is a very special oil are its flavor, color and aroma.

Tla kultiviramo, plitko orjemo in odstranjujemo oziroma meljemo vse zeleno, kar potencialno odvzema vodo oljkam, obenem pa je biološko hranilo. Z rahljanjem zemlje omogočimo tudi boljšo akumulacijo meteornih padavin, ki so v Istri neenakomerne ter s tem povečamo vlažnost zemlje. Kemičnih proizvodov ne uporabljamo, smo biološko usmerjeni in uporabljamo le naravna biološka hranila v obliki mikroorganizmov ter guano, iztrebke netopirjev z Madagaskarja kot gnojilo. Zemljo nehamo obdelovati vsaj mesec dni pred obiranjem, da se zatravi in s tem prepreči mešanje zemlje s plodovi ob obiranju.

A lot of attention is given to picking of olives. Years of experience have taught us that sooner the harvest is done, better quality we get. The top quality of the obtained pressed oil justifies early harvesting which in any case takes place before 15 October every year. Olives are hand-picked and fruits are then transported to an oil mill where time for milling is booked beforehand for twice a day so that our olives do not wait for pressing more than 4 hours. This is later seen in an analysis of free fatty acids, which shows ten times less fatty acids than permitted and this is what determines the oil as extra virgin.

The oil is produced by the cold-pressing method that retains in the oil all natural substances. With the newest technology of modern mills we succeeded in reaching the top quality of our oil, its natural appearance and harmonious fruity flavor. The oil is not filtered because we do not wish to remove its rich fruity part, and it is left in the containers for at least 60 days so that it may get clear only by means of gravitation. Nature’s way. Simple way.

This way you will be tasting its qualities all the time and your taste buds will be grateful for that delight. But you can also roast on it because heat will not ruin it, only the oxidants to which their percentage will be partly decreased.
